Joy Behars Lasagna Recipe

I was watching the view yesterday, and Joy was sharing her lasagna recipe. Not only did it look wonderful, it sounds so easy. I have never made, homemade tomato sauce before. This I will try. So if you missed the show here is her recipe.

Joy's Behars Lasagna

Tbsp Olive Oil

1 cup Chopped Onion

2 Garlic Cloves

1 ½ Lbs. Sweet Italian Sausage (Out Of Casings)

1 Large 28oz Can Crushed Italian Tomatoes

1 6oz Can Tomato Paste

¼ cup Chopped Parsley

½ cup Chopped Basil Leaves

2 Tsp Sea Salt

¾ Tsp Pepper

½ Box Lasagna Noodles

1 Lb Whole Milk Ricotta Cheese

1 cup Grated Parmesan Cheese

1 Extra Large Egg

1 Lb Whole Milk Mozzarella Cheese

¼ cup Parmesan Cheese For Sprinkling At End

1 Preheat the oven to 400 degrees F and position the oven rack in the middle.

2. To make the meat sauce, heat the olive oil in a large saucepan Add the onion and cook over medium-low heat until translucent (about 5 minutes). Add the garlic and stir for one more minute Then add the sausage and cook over medium-low heat Breaking it up with a wooden spoon, for 10 to 15 minutes, or until fully cooked and no longer pink Add the crushed tomatoes, tomato sauce, tomato paste, oregano, basil, kosher salt, and freshly ground black pepper Simmer uncovered over medium-low heat for 20 minutes.

3. Soak lasagna noodles in hot tap water, for at least 15 to 20 minutes.

4. While the sauce is simmering, make the cheese filling In a large bowl, combine the ricotta, 1 cup of Parmesan, the beaten egg, chopped parsley, kosher salt, and freshly ground black pepper Set aside.

5. Ladle one third of the meat sauce into a 9”x 12”x 2” casserole or baking pan Spread the sauce over the bottom of the dish Then add approximately half the pasta (in one layer, cover the sauce with the noodles), half the sliced mozzarella, half the cheese mixture, and one third of the sauce Add another single layer of noodles, mozzarella, ricotta, and the remaining sauce Sprinkle with the remaining ½ cup of Parmesan.

6. Bake uncovered for 35 minutes, or until the sauce is bubbling.

Happy Halloween!!!!

Happy Halloween!!!
Last night was our night to halloween in my little town, from 6:00 to 8:00. Oh my, kids were everwhere. I actually didn't have that many, but the ones I did have, I didn't even know them. I handed out candy bars to all the gohsts, goblens, princesses, spidermans, and a variety of others. It was fun seeing all the different costumes and the kids.

Fall Vacation!

Good Morning! Just got back from CT and NY. Went to visit my daughter and grandsons. I had a wonderful time, of course the week went by too quick. I did a little shopping, saw a show, and just had a fun time. I plan to go back at Thanksgiving for a long weekend, and go into NY and see the  Rockettes also do some Christmas shopping. I love NY at Christmas. My business is doing great, I have more clients that I really can handle, but I will manage. I am so blessed. God is so good. I have a couple of recipes to share. I made these while on Vacation and the kids loved them.  Enjoy!

What a fun time we had. I just love going to NY nice restaurants, shows, Shopping, tours and most of all the people. So many different nationalities and so many different languages. Its so interesting. I will be going home this weekend. I hate that I am going to miss the trees turning into fall. The mountains are beautiful this time of year. Well back to Indiana and back to work. Work does the body good.

Cleaning Tip

I cleaned my oven this week, instead of using all those chemicals, I used vinegar and baking soda just to see if it worked. I have to tell you it worked great. Spray your oven with vinegar and sprinkle baking soda thickly on the bottom, sides, and door of your oven I went back and sprayed vinegar again after I put the baking soda on. I let mine set for about 3 hours but if your oven is really dirty let it set over night. Take a clean cloth and wipe it clean, you will have to wipe it several times to get all the baking soda off. My stove is an old stove but it cleaned up great. Hey give it a try!
