Fall Vacation!

Good Morning! Just got back from CT and NY. Went to visit my daughter and grandsons. I had a wonderful time, of course the week went by too quick. I did a little shopping, saw a show, and just had a fun time. I plan to go back at Thanksgiving for a long weekend, and go into NY and see the  Rockettes also do some Christmas shopping. I love NY at Christmas. My business is doing great, I have more clients that I really can handle, but I will manage. I am so blessed. God is so good. I have a couple of recipes to share. I made these while on Vacation and the kids loved them.  Enjoy!

Crispy  Potatoes
3 T butter
3T Olive oil
4 lb of russets Potatoes peeled or unpeeled
4 shallots thickly sliced
salt to taste
4 sprigs of thyme

1.   Preheat oven to 375 degrees. In a small bowl, combine butter and oil. Brush bottom of a round 9-inch baking dish with some butter mixture. With a sharp knife or mandoline, slice potatoes very thinly crosswise.
2.   Arrange potato slices vertically in dish. Wedge shallots throughout. Sprinkle with salt, brush with remaining butter mixture. Bake 1 1/4 hours. Add thyme and bake until potatoes are cooked through with a crisp top, about 35 minutes more.

Apple Dip

1 package (8 ounces) cream cheese, softened
1 tablespoon peanut butter
1/2 teaspoon pumpkin pie spice
1 jar (7 ounces) marshmallow creme
Assorted apple wedges

Directions
